Sugar-Free White Chocolate Chip Macadamia Nut Cookies THM S, Low Carb

These are, as the kids say, Da Bomb! If you have macadamia nuts so much the better, otherwise slivered almonds work great.

As a lifelong, avid fan of chocolate chips, in general, the white chocolate chips have always been my favorite.

I’ve thought many times about how great it would be to have access to them and even contacted Lily’s asking if they might develop any; years ago.

This cookie is not crispy but it’s not soft and delicate.

It is a firm dense cookie that will totally remind you of a real live white chocolate chip cookie!

Amazon doesn’t carry these new baking chips at the time of the writing of this post but they are available at most local Walmart stores in limited quantity so if you find them around be sure and buy a couple extra packets for your THM or KETO friends!

Sugar Free White Chocolate Chip Cookies

As you may have heard these white chocolate chips do melt into the cookie and sometimes out of the cookie. Here’s release that Bake Believe put out on the subject recently.

I noticed one THMer, Jennifer, had put her chocolate chips on top so I tried it and found that worked to bake the cookies first and then stick the chips on, seems sort of weird, but it does the trick.

As a compromise, I used 1/2 of the chips in the recipe and baked the cookies. Then I saved the other half and stuck them on top while they were still warm from the oven and soft. They will still be melty for a while, as shown but will mostly hold up if you don’t insert them while the cookies are still hot.

For a future batch, I will set my timer and allow them to cool for 5 minutes then add the chips and refrigerate them for a few minutes before attempting to stack them.

This recipe for Sugar Free White Chocolate Chip Cookies works best with a natural sweetener called Gentle Sweet but be aware of the following when using it:

THM Gentle Sweet is so authentically sugary sweet because it contains xylitol and high-quality stevia.

BUT xylitol is dangerous to pets so if yours have access to your treats be sure and use the Xylitol Free Gentle Sweet (the taste and texture are not quite spot on but still a great product.

To get the unique texture of a real white chocolate cookie, all dense and chewy I combined this finely milled unblanched almond flour (I get mine at WalMart) along with the highest quality oat fiber on earth! Aff link:

This is the recipe that I tweaked (replacing psyllium and protein powder with THM oat fiber and adding xanthan gum and egg). The texture on these was good before but it is incredible now!

NOTE: These cookies were converted from my shortbread cookie recipe and like that cookie, they will become nice and firm when totally cooled, but are easily broken until then so let them cool on the parchment before attempting to handle them.

Sugar Free White Chocolate Chip Cookies

Prep Time 10 minutes
Cook Time 10 minutes
Total Time 20 minutes


  • 1/2 cup butter (1 stick)
  • 1 egg
  • 3 oz. cream cheese
  • 1/3 cup Gentle Sweet
  • 1 cup almond flour
  • 1/2 cup THM oat fiber
  • 1/2 tsp xanthan gum
  • 1 cup Let's Bake Believe white chocolate - divided
  • 1/2 cup macadamia nuts or slivered almonds


  1. Preheat oven to 350 degrees. Prepare a baking sheet pan with parchment.
  2. Place the butter, and cream cheese in a glass mixing bowl in the microwave of thaw briefly to soften.
  3. Cream together with a large fork or slotted spoon or use a mixer. Add egg and continue to cream together.
  4. Whisk in sweetener then add in flours. Sprinkle the xanthan gum over the flours and mix all in together well.
  5. Fold the 1/2 cup white chocolate chip and nuts in last (reserve 1/2 cup).
  6. Scoop the dough out into 2 inch balls with a small cookie scoop and add them to a parchment covered baking sheet.
  7. Mash them down with your hand into 1/4 to 1/2 inch height because they won't spread on their own.
  8. Bake for about 10 minutes or longer till lightly browned. Watch them carefully so they don't burn.
  9. Remove from oven and allow to cool well before attempting to remove from the parchment paper.
  10. While they are still warm (but not hot) press the rest of the chips into the cookies for a nice melty white chocolate experience.
  11. They become nice and firm when totally cooled.
  12. Makes 18 cookies.
